I’m always looking for quick and easy snacks for the boys to enjoy. Today I am sharing this uncomplicated ham, cheese and paprika savoury muffins recipe… perfect for lunch boxes, family picnics or as a snack on their own! 

Ham, Cheese and Paprika Savoury Muffins

This recipe is so simple that if the kids want, they can join in and help make it. These ham, cheese and paprika savoury muffins freeze well, so great for making a big batch and taking out on demand.

Freezing Muffins

Firstly ensure that you cool the muffins completely by transferring them onto a wire rack to cool. When completely cool, wrap them tightly in plastic wrap or foil and then place into freezer bags. Make sure to squeeze out any air. This will help prevent freezer burn and dryness.

Thaw Frozen Muffins

Muffins can be thawed at room temperature, if not going to be eaten right away. Alternatively, place the muffin on a napkin or microwave-safe paper plate. Heat on high for approximately 20-30 seconds. Stopping halfway through to check that it is thawing. Do one muffin at a time.

Start by sifting the dry ingredients: flour, baking powder, baking soda, salt, paprika. Rub in the butter using your fingertips. Set that aside and whisk together in a separate bowl the milk, egg and lemon juice. Next, add the wet ingredient mixture to the dry ingredients and mix until just combined. Be sure not to over mix. Finish by stirring in the ham, grated cheese and freshly chopped parsley until incorporated.

Gently drop the batter into the muffin holes.

Bake for approximately 15 minutes until cooked.

Ingredients

  • 2 cups Flour
  • 4 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 tsp Ground Paprika
  • 1 tbsp Parsley Chopped
  • 80 g Butter
  • 1 Egg Beaten
  • 250 ml Milk
  • 1 tsp Lemon Juice
  • 50 g Ham (About 4 medium slices)
  • 1½ cups Cheddar Cheese Grated

Instructions

  • Preheat Oven to 200°C and prepare the muffin tray.
  • Start by sifting the dry ingredients: flour, baking powder, baking soda, salt, paprika.
  • Rub in the butter using your fingertips. Set that aside.
  • Whisk together in a separate bowl the milk, egg and lemon juice.
  • Next, add the wet ingredient mixture to the dry ingredients and mix until just combined. Be sure not to over mix.
  • Finish by stirring in the ham, grated cheese and freshly chopped parsley until incorporated.
  • Bake in oven for about 15 minutes, or until muffins are cooked.
