I often find myself needing to put together a salad in a whim. This Cabbage and Apple Salad Recipe is a real winner. I love the crunch of all the ingredients and the added bonus is the creamy Apple Slaw Dressing that is poured over to finish it off.

If you’re anything like me then you’re always looking for new and exciting salad recipes. Don’t get me wrong, I don’t mind a Greek Salad, but if I could choose, I’d probably serve you a salad you’ve either never had or only tried once before.

I like to experiment with different ingredients, and when it comes to Salad ingredients it is easy to do just that. Not that combining Cabbage and Apples are experimenting with something new, but you get my drift.

CAN YOU EAT RAW CABBAGE IN A SALAD?

Absolutely! You can either cook it or eat the raw cabbage in a salad. In fact, it’s very easy to add to your diet. When cooked, it’s typically added to soups and stews, and often even fermented and made into sauerkraut. Cabbage salad with apple is very popular and apart from cabbage being adaptable to many recipes, it’s also very affordable!

SALADS USING CABBAGE

Cabbage is often overlooked as a salad ingredient, despite its impressive nutrient content. Although it may appear to look like lettuce, it’s actually a vegetable! There are various shapes and colours, including red, purple, white, and green, and the leaves can either be crinkled or smooth.

CAN YOU USE OTHER DRIED FRUIT INSTEAD OF CRANBERRIES?

Feel free to try other fruits such raisins, dried apples, or even dried apricots. Anything really.

WHAT TO SERVE WITH THIS TANGY APPLE COLESLAW RECIPE

CAN I PREPARE THIS COLESLAW SALAD WITH APPLES IN ADVANCE?

Shredded cabbage should last for about five days in the fridge. So it’s easy to prepare the cabbage ahead of time. Once prepared, you should keep it in the fridge in an airtight container. This will prevent the cabbage from picking up any other smells and also from drying out.

As this Apple Coleslaw Salad Recipe contains apples, I wouldn’t recommend you adding the other bits and pieces of this salad until right before serving it. It’s such a quick recipe so you shouldn’t want to combine it all in advance. You can chop the apples and keep in lemon juice in an airtight container, but it is best served right away.

HOW LONG DOES COLESLAW LAST?

Unfortunately prepared coleslaw does not have a long shelf life. It is relatively short. Whether you buy it from the supermarket or make it yourself, it’s pretty much the same. It’s always best to look at the best before date on the shelf life label when buying it. It may still appear ok, but the reality is that it may have gone off.

Homemade coleslaw will generally last between 3-5 days, depending on which ingredients you used to make the dressing as well as how you have stored it.

HOW TO TELL IF COLESLAW IS BAD

When it comes to sure signs of bad coleslaw, look for the following:

  1. Mold. If there is mold – THROW IT OUT!
  2. Discolorations.  If there are any discolorations, it means that decay is setting in and the salad should be discarded.
  3. Sour or off smell. As with most foods, if the odor has changed drastically, then it should not be consumed.
  4. Prolonged storage. If you have stored it for longer than the above recommended time, it’s better to rather throw it out. Even it if does still seems right.
  5. Awful taste. If you’re not 100 % sure, and it may still be a day or so within its best before date, give it a taste. If it’s off, you’ll know for sure!

This Cabbage, Apple Coleslaw Recipe really is easy to put together and in a matter of a few minutes.

Firstly, prepare the coleslaw ingredients by shredding the cabbage, slicing the spring onion, and cutting the carrots into batons.

Next prepare the Apple Slaw Dressing by whisking together the Mayo, apple cider vinegar, greek yoghurt, honey and salt and pepper to taste.

Finally dice the apple and toss everything together with the slices almonds and dried cranberries in a large bowl. Serve immediately.

TIP

ADD 1 TABLESPOON OF CURRY POWDER TO THE DRESSING INGREDIENTS AND TURN THIS DISH INTO A SWEET CURRY COLESLAW SALAD.

Cabbage and Apple Salad with Creamy Dressing

This Crunchy Cabbage and Apple Salad is fresh and delightful. Served with a Creamy Dressing and finished off with Almonds and Cranberries it's the perfect side dish to a braai or any mid-week meal!

Ingredients

Coleslaw

  • ½ Green Cabbage Shredded
  • 3 Medium Sized Carrots Cut into Batons
  • 2 Apples Cubed
  • 1 Cup Green onions Sliced
  • 1 Cup Dried Cranberries Or any other dried fruit
  • 70 gram Sliced Almonds

Creamy Dressing

  • 125 Grams Greek Yogurt
  • ½ Cup Mayonnaise
  • 4 TBSP Honey
  • 2 TBSP Apple Cider Vinegar
  • Salt and Freshly Ground Black Pepper To Taste

Instructions

Coleslaw

  • In a large bowl toss together the shredded cabbage, carrots, apples, green onions, almonds, and cranberries. Leave at least one tablespoons each of the almonds and cranberries to toss over the salad once you have poured over the dressing.

Creamy Dressing

  • Whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth.
  • Season with salt and pepper to taste.

Assemble

  • Pour the creamy dressing over the salad mix and toss to evenly coat. Finish off with a sprinkling of the almonds and cranberries.
  • Serve immediately.
