NO BAKE SNICKER BAR INSPIRED PROTEIN BALLS

Equipment

  • Food Processor

Ingredients

  • 1 Cup Peanuts
  • 2 Tbsp Cocoa
  • 1/2 Cup Coconut
  • 1 1/2 Cup Medjool Dates
  • Pinch of salt

Ingredients to roll balls in

  • 2 Tbsp Peanuts Forms part of 1 Cup of peanuts mentioned above
  • 1 Tbsp Coconut

Instructions

  • Place the peanuts in a food processor and blitz until ground well. Remove from the processor. Set aside 2 tablespoons of the grounded nuts.
  • Add the dates, coconut, cocoa and a pinch of salt to the food processor and blitz until ingredients come together to form a ‘dough’. Add a little water if needed.
  • Roll the mix into balls and roll each one in some of the ground peanuts and coconut.

Notes

Store leftovers in an airtight container in the fridge for up to a week or freeze for up to 3 months.
