Cabbage and Apple Salad with Creamy Dressing

Ingredients

Coleslaw

  • ½ Green Cabbage Shredded
  • 3 Medium Sized Carrots Cut into Batons
  • 2 Apples Cubed
  • 1 Cup Green onions Sliced
  • 1 Cup Dried Cranberries Or any other dried fruit
  • 70 gram Sliced Almonds

Creamy Dressing

  • 125 Grams Greek Yogurt
  • ½ Cup Mayonnaise
  • 4 TBSP Honey
  • 2 TBSP Apple Cider Vinegar
  • Salt and Freshly Ground Black Pepper To Taste

Instructions

Coleslaw

  • In a large bowl toss together the shredded cabbage, carrots, apples, green onions, almonds, and cranberries. Leave at least one tablespoons each of the almonds and cranberries to toss over the salad once you have poured over the dressing.

Creamy Dressing

  • Whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth.
  • Season with salt and pepper to taste.

Assemble

  • Pour the creamy dressing over the salad mix and toss to evenly coat. Finish off with a sprinkling of the almonds and cranberries.
  • Serve immediately.
